New England Seafood International had doubled its capacity for flake ice production, which is now provided by two pack 12 French Geneglace flake ice generators.
One or both machines is in use during sis-day production week. Flake ice falls from the generators into bins and is then taken to the preparation and processing areas, which are maintained throughout at 5degc.
Established in 1991, New England Seafood International has become one of the UK's largest importer and processors of fresh, exotic seafood.
From its purpose-built processing plant in south London, it supplies a range of primary and added value products to major supermarkets, wholesalers, restaurants and airlines.
Product is sourced from more than 40 countries and potential new suppliers are constantly under review for top-quality fresh and frozen
fish, including crustacea and other shellfish.
New England says it has always combined stringent temperature control standards with attention to presentation and appearance of delivered product. Fish such as seabass and tuna is hand-packaged using Geneglace flake ice for London delivery. This maintains product at 0 to 2degC through to the end user.
Says production manager Terry Walden: "We have been using Geneglace equipment since our early days, and brought our first machine here when we moved to our new purposebuilt facility four years ago.
"With significantly increased production we needed more ice.
"I have always been pleased with the consistency and handling quality of the flake ice and the overall reliability of the equipment, so we did not need to consider alternatives before doubling up on our capacity
with Geneglace machines.".
Geneglace flake ice has a large surface area and is subcooled to -6degC. Consequently, it has a high heat absorption capacity and a large heat exchange surface area for rapid cooling.
The slow melting rate not only maintains temperature but also helps to sustain the appearance of fish with clear eyes and smooth shiny skin.
There is little risk of dehydratation that can occur if refrigeration is used alone.
As well as processing applications, Geneglace equipment is used worldwide throughout the fish food chain from fish farms and on-board ice-generators, major portss and markets to retail display.
Installations range from those with an output of over 40 tonnes down to 180kg per 24 hours.
