Fruits and vegetables
Flake-ice is used in direct contact or more commonly, mixed with cold water to pre-cool fruits and vegetables. Pre-cooling is designed to remove the heat of the fields from the produce after harvesting. It reduces metabolic processes and bacterial action thereby extending the shelf like and freshness of the produce.
The mixture of water and flake-ice washes residue, soil and impurities off the produce which looks cleaner, fresher and more appetising as a result.
Pre-cooling is used on the following produce : broccoli, asparagus, artichokes, cress, lettuce, corn, radishes, endives, celery, carrots, cantaloupe melons, chicory, apples, cherries, oranges, peaches, pineapples, grapefruit, pears, etc.
